          Description

          Replace real captured data with realistic but fake sample values.

          Requirements:

          • Use realistic names, addresses, emails, etc.
          • Maintain data consistency (e.g., totals match line items)
          • Keep computed fields accurate for the fake data
          • Ensure no real customer/sensitive data remains

          Acceptance Criteria:

          • All captured data replaced with fake values
          • Data is realistic and suitable for documentation/previews
          • No PII or real customer data in example files
          • Computed fields are consistent with their inputs
