Replace real captured data with realistic but fake sample values.
Requirements:
- Use realistic names, addresses, emails, etc.
- Maintain data consistency (e.g., totals match line items)
- Keep computed fields accurate for the fake data
- Ensure no real customer/sensitive data remains
Acceptance Criteria:
- All captured data replaced with fake values
- Data is realistic and suitable for documentation/previews
