Update the string helper to support truncation

          Description

          We need to have an easy way to truncate strings, so we should have a method in the DataStructureString helper for which to do this.

          It will also help to fix issues like CORE-1071.

              Strings can be truncated based on length (not multi-byte safe), word length, and/or the first line break
